Small Success with a Side of Bacon

The Kid’s blood sugar ran high all night and into this morning. We don’t know why. Sometimes diabetes is just random. And frustrating.

BACONSo Hubs suggested that he have a low-carb breakfast instead of his usual meal (a double bowl of instant oatmeal and an over-easy egg).

That meant I made bacon on a weekday.

I hate making bacon because I’m left with a huge mess all over the kitchen. Actually I almost never make the bacon. Hubs makes it. And then I rant that I want him to clean up the mess, and then I wind up cleaning up the mess myself, and it’s never pretty.

But today I maintained a good attitude about the bacon and its mess, and I hope it bodes well for The Kid’s blood sugar later today.

We’re not worrying about cholesterol right this minute. One thing at a time.

baked salmon 1In other food news, I tried yet another recipe from Jeff Young’s cookbook, Around the Table with the Catholic Foodie. And it’s yet another winner. Baked Salmon with Olive Oil and Salt. Seriously, that’s all you need. No pepper. No lemon. Nothing creamy or fancy. It’s simple and delicious.

Every recipe I’ve tried from that cookbook, so far, has been a great success.

In the name of cleaning up my act, I tossed a large basketful of the Personal Journal section of The Wall Street Journal. I enjoy reading those, but I got way behind when I was teaching every day, and I would just take the section out of the paper and recycle the rest. Finally I just admitted that I’m not going to get to these ever. And I threw them into the recycling bucket.

That felt good. I wonder what unused stuff I can let myself let go of today?

  1. I hear you on the not wanting to make bacon on a weekday. Consider it a jewel in your crown in heaven. So when you get to heaven and find a bacon-shaped jewel in your crown, you’ll know why.

  2. Hey Barb, We cook out bacon in the oven these days. So much less mess. We cover a cookie sheet with foil, lay out the bacon. There are various heat/time combinations that you can look up.

  3. I like the oven idea for bacon. I’ll check into that. Meanwhile, today, I’m buying breakfast sausages because I can just cook a couple at a time.

  4. I get so behind in my reading all the time. I hate doing it, but sometimes tossing a bunch of that stuff into the recycling bin is the only thing that helps. But I SO want to read everything. Ah well, have to make choices. I need to look at that last minute fried rice. We need quick and easy meals for Fridays when we skip meat and therefore can’t use leftovers from the week. Quick and yummy recipes are always high on our priority list.

    • The fried rice is yummy! If you don’t do bacon grease on Fridays, just use oil (though the bacon grease does add that extra something). I have a lot of meatless recipes, many simple ones, on my site and CatholicMom.com has one or 2 every single Friday.

  5. I cook several pounds of bacon when I cook it. I do it about 3/4 of the way done in the oven (on lipped cookie sheets lined with heavy duty foil on racks that have been sprayed with Pam) and when it’s cool, I roll it one either waxed paper or plastic wrap, pop it into a freezer bag and into the freezer. When I need some, I take it out, put it on a paper towel covered plate in the microwave for about 30-40 seconds and it’s done. That way, I have the mess once for two or three pounds worth of bacon.
